Description

The invention concerns an apparatus for decontaminating musts and wines from Ochratoxin A (OTA), a toxin commonly found in red wines, using uncontaminated grape pomace. The system exploits pomace’s selective adsorption capacity to remove OTA without altering organoleptic properties of treated wines. Developed by CNR-ISPA with Industrie Fracchiolla S.r.l., the prototype includes a 1000 L main tank and 3–5 auxiliary tanks for wine repassage over pomace.
