The study of immune-mediated intestinal disorders, such as celiac disease, wheat allergy, non-celiac wheat sensitivity and inflammatory bowel diseases, requires experimental systems that are truly predictive for humans. Traditional animal models show significant limitations in reproducing human intestinal physiology and immune responses, hindering effective clinical translation.
